Wheat Free Waffles
Ingredients
- 3 cups soy or rice milk
- ⅔ cups cashews
- ½ cup almonds
- ⅔ cup dates
- ½ cup coconut
- 1 teaspoon vanilla
- ½ teaspoon sea salt
- 1 ¼ cup Ener G white rice baking mix
- ⅓ cup corn flour
- ⅓ cup brown rice flour
Directions
This waffle recipe uses corn and brown rice flour along with nuts and dates to make a great gluten and wheat free waffle.
Blend nuts and dates in milk until they are in small pieces. Pour into a bowl and stir in salt, vanilla, coconut, and flours. Mixture should be fairly thick. Add a touch more milk or flour if needed. Spoon onto a sprayed hot waffle iron. Bake about 8-10 minutes. As batter sits it will absorb moisture and get thicker. Just keep adding a little more milk.
